One is that "the gap increases - between consumer demand for organic foods and the development of organic agriculture." In the figures, the sale of organic foods in 2020 increased by 22.3%, and the transition from traditional agriculture to organic increased only by 5.3% over the same period.

The second reason is food speculation. "Farmers are played again," says Collmann. Since only very large farmers can create their own storage facilities, they sell their grain wholesalers at the price of harvest time. At the same time, farmers do nothing from raising prices by more than 100 percent. In addition, the merchants of commodities used the deficit of organic grain and even more pushed prices up, holding the goods.

And another aspect causes frustrated by the pioneer of organic products from Bohlsener Mühle: "The purchase of raw materials turns into a battle that the medium-sized food industry will almost certainly lose in competition with a globally working industry."

And the situation is contrary to the fact that Collmann and his colleagues have been built over the years: strengthening large-scale, regional and sustainable medium-sized business, working in close cooperation with organic farmers.
