Last summer, the creators of "Chebureks and Zamnoye Larisa" opened a branch in the village of Komarovo. Bohemian and democratic glass was very different from other cafes and immediately became the most fashionable place of the resort area - director Alexei Herman and writer Sasha Filipenko came at the open air, Chebureci and Sasha Krasheli. - It all started during isolation. It so happened that I and my close friends were at one point in [the village] Komarovo for a long time for a long time (symbolic for our time the word). I wanted something simple, democratic and relevant.

Resources [to launch a new project] were required minimal. Our friends, and now already partners - Lena Kotlyar and Dani Timofeeva - there was an active bistro on the 2nd country street. How to launched a new "Larisa"

- The project was launched by the joint efforts of the team of Bistro and Larisa with Roma Smirnov from the "Cotor Drop". Without it, all this would be impossible in terms of kitchen, atmosphere, veranda design and technical escort. A little later, Bartender Dima Yazikman pulled up and essentially made a relevant bar at minimum facilities, attracted Vanya Kuritsyn from the "Dead poets" - and the pot brewed. Further, the wife of Hitkov with a wine line was already won, and all this was not just Cheburen, but some national team of all Petersburg stars in Komarovsky Saraj with Chebureki.

In addition to optimism there were fears. First worried that maybe it is not necessary for anyone. But when after a comic post in Facebook on Thursday, we saw the crowd on Saturday under the door, ready to wait for the Chebureks to one and a half hours, the fears moved to another plane: how to organize space and work so that everyone, including residents and the village administration, was comfortable, And the Kovid is not penetrating to us.

They began to urgently erect the veranda at the site of the courtyard so that the expectation of Take Away would take place not only on Earth in front of the entrance, but also on the open terrace in the yard. For the reorganization planned to spend no more than 350 thousand rubles, as a result, about 1.5 million left for everything, including the veranda.

- Now all this is seen by the adventure, which worked in spite of everything. Without a pandemic, Shalman would not be. It turned out to be the case when you just understand what to live and act now here, there is nothing more to wait. There is no city. Apocalypse is.

After almost a year of work, I evaluate the project as successful. We extract profits from the first month, managed not to leave in minus even in November and December. In October and November, the order from the film crew Alexei German was helped. He was in [the village] Repino filmed a film, and we provided an outdoor diet.

We had an initial financial plan that we have greatly surpassed: both in terms of revenue and [in terms of] costs. At the peak, the turnover was not inferior to the best months of work on Rubinstein, and from the moment of discovery we sold 30 thousand Cheburekov, 500 kilograms of Plov and 1,700 servings of Aperley Syringe.

The secret of success is simple: we guessed with a request to the actual, democratic and at the same time the artistically meaningful (if you want - bohemian) project. Komarovo - the cradle of Russian and Soviet culture, and 99.9% of the catering in the district are waiting for or a proletarian, or a non-unhable official. There are nothing to the people with modern and thin there.

But this is all lyrics. The main rule of success is simple: do delicious. For these people are ready to forgive us at the same time long waiting and tolerate our strange antics. They say, it came to the point that Aram [Mnatsakanov] began to prepare pasties in her "fish at the cottage" (representatives of the "fish" reported to us that Chebureks in the restaurant menu appeared earlier than 2020 - approx. "Paper"). And you say postmodernism is dead!

Why did concerts arranged in Larisac and showed movies

- For the second month of work, when the veranda was completed, we organized a regular cultural program. What for? To a greater degree, like all this, - for yourself. Sasha Butkes from The Hat responded to the idea, and every Thursday beautiful city teams gave concerts that were collected by Achlag. Showed movies. Sucited children's quests ... could not do this? Can. But that thanks, which our arrows caused from local residents, serves as a better assessment.

What can be allocated? I am not a sign, if I say that every evening was special. Who was, he will understand what I am. It was some kind of perfect dacha life. This third place. Such a response and such quantity of smart and famous guests before that around my projects did not happen. At the same time there was no segregation: the door to this world was open to all.

We even joked: if you knew that for happiness, you just need a Saraica at the station, you could save many means and strength in the past.

How cafes reformatted in winter

- Komarovo is a seasonal project. With the onset of September and - especially - October had to delay the belt: reduce the number of shifts for staff, optimize the menu. Otherwise, it did not make sense to work, easier to go on vacation.

We managed to find comfortable conditions for staff residence, and we continued work. On weekdays - one bartender and one cook, on weekends - two. The kitchen menu has shown, but not critical. All major positions in place. The bar was more damaged: the choice of wine, imported beer and cocktails on the crane was much smaller. Refused all additional entertainment activities, moved to the rural pub regime.

On the veranda put the Vigvam, with whom Dani's father [Timofeyev] at one time traveled the entire Union. Wigwam replaces us and guests the entire interactive. You can come from the city and very comfortable sit on the street by the fire.

It was something like a joke on the topic of winter street veranda Comrade Beglov. There was an idea to put a barrel bath and a font of firewood, but, weighing everything for and against, we decided to refuse. Although if any alcoholic brands respond to creative, we are ready to cooperate.

We were very cool and in the family spent January, and at the same time built plans for the new season. Some cardinal transformations are not planned. There is a line, and we will continue it - along with concerts and other activities.

Our main task is to save and, if possible, improve the quality of the product. I hope that it will be possible to somehow expand the energy and technical capabilities of the kitchen - it will reduce the waiting time. Well, we will try to somehow improve our relaxed service.

In the summer of 2020, food in the fresh air was of particular importance for St. Petersburg restaurants: Rubinstein Street, for example, turned into a spare area of ​​the spontaneous and not fully legal partin.
